We are a small independent business. Located in the historic downtown of Olympia. Our retail clientele is a diverse mixture of the community with a bulk of our market coming from downtown employees, capitol workers, and professionals. Two blocks from the historic farmers market, near the port we have cozy café that has become a popular meeting place. Our bakery menu consists of artisan breads, traditional viennoiserie, and simple desserts as well as french press coffee and espresso drinks. There is a great demand for our wholesale breads and pastries and we are working to offer those items. For lunch we offer up-scale sandwiches, soups, salads and we are currently designing a bistro / amuse-bouche menu. We are dedicated to authentic bread, pastries, and food of the highest quality.  With a style that leans more towards perfecting classics, as opposed to pushing creative frontiers. The owners are French and American with a background in formal culinary work, artisan baking, fine dining, and travel; they are involved in the daily baking and management. Most of our kitchen staff is formally trained or seriously interested in professional cooking. As a small operation, teamwork is essential as everyone contributes to daily production and cleaning.

Typical (but not exact) Positions:

Bakeshop and Bistro
All cooking and production applicants should be interested in producing the best product possible, be comfortable in a commercial kitchen,  and be able demonstrate an understanding of the pace, hours, organization, cleanliness, and professionalism typical of high end kitchen.
Bread Baker
Applicants should have professional experience or high-level training with natural leavening methods, laminated doughs, mixing, scoring, proofing, baking, and be knowledgeable of commercial cooking equipment. Bakers should feel comfortable with the principle of fermentation and be able to analyze and problem solve (as it relates to baking). 
Interns and Recent graduates with a focus on bread baking welcome.

Laminating, shaping, and baking of croissants and “flaky” pastries make up half of this position. Pastry Bakers are expected to have/or be interested in the lamination and leavening process and be able to analyze and problem solve at each step. Also quick breads, simple cakes, scones and cookies are made from scratch each day. This position also involves both savory and pastry prep. Applicants should be experienced in volume measurement and professional baking/ or cooking. Interns and recent graduates welcome.
(part time for one or full time for both)
This position is responsible for prepping the items used in the lunch and pastry menus. Might include meat slicing, cheese portioning, garnish prep, dressings, cookie doughs, batters, roasted nuts ganache etc.. Requires efficient knife skills, a comfort with weights and liquid measures, and the ability to work efficiently in a small area, stay organized, plan ahead and keep inventory. Excellent entry level position.
 
Bistro Cook (coming soon)
Prep, assemble and plate to-order items from the bistro and “amuse-bouche” menu. Possible breakfast, lunch and, “cocktail” offerings. Menu might include tartines, grain salads, breakfast stratas, fruit salad, quiche, soups, fresh salads, pates/terrines, artisan cheeses, olives, cold seafood. This position is excellent for an experienced cook with an interest in garde manger. (At this time there is no hot line service.)
 
Service is a component of what we offer and we like to offer the best that we can, garnished with the little gestures that make people smile, and return. Our counter people are more than just baristas or cookie baggers. They work with our customers to understand the subtle differences between breads, and flavors of pastries, make the perfect espresso drink, efficiently but personably plate up, tie up and pass out lunch, take special pastry orders, pick-up and wash dishes, keep the counter stocked with cups and bags and boxes, clean, sweep, and put cookies in bags...sometimes all at the same time. The counter people are responsible for presenting the bakery and the products to the customers. As a new business our menu is constantly expanding and methods and standards of service still growing and so it helps to be flexible. Applicants should be professional in appearance with a friendly demeanor. Patience with details and work as a team, and carry through with tasks are required. Previous restaurant work is preferred and an interest in food is helpful.

Our needs are constantly evolving as we expand we expect to have positions in Catering, Delivery Drivers, Servers, and Bakery Cleaners/Dishwashers available. Olympia is the capital of Washington State. A fairly small town with a historic center surrounded by more modern shopping conveniences. Until recently Olympia has been used as a major industrial port, and is working these days to revitalize and gentrify the downtown area. Located on the water it has several beautiful lakes and an active port. The town not only houses the state’s government but several state agencies, and two universities. The community is a diverse mix of blue-collar, white-collar, students, families, artists, and old-timers. It is also a very active community with organizations and activities representing diverse opinions, political movements, and lifestyles. Olympia enjoys a mixture of traditional historic neighborhoods, new modern developments, and even homes with land – all close to downtown and affordable. Olympia is situated mid-state close to Portland, Oregon (S) and Seattle, Washington (N.) Situated at the foothills of Mt. Rainer, and the Olympia National Forest there is plenty to do in the city or the wilderness.
